4 boneless, skinless chicken breasts

1 cup (120 g) all-purpose flour
2 large eggs
2 tbsp milk
2 cups (200 g) breadcrumbs (preferably panko or Italian-style)
½ cup (50 g) grated Parmesan cheese
2 tbsp fresh parsley, finely chopped
Vegetable oil (for frying)
Lemon wedges (for serving)
Instructions :
- Place each chicken breast between two sheets of plastic wrap and pound gently with a meat mallet until about ½ inch (1.25 cm) thick.
- Season both sides with salt and pepper.
- Prepare three shallow bowls: one with flour, one with beaten eggs mixed with milk, and one with breadcrumbs, Parmesan, and parsley.
- Dredge each chicken breast first in flour (shaking off excess), then dip into the egg mixture, and finally coat with the breadcrumb mixture.
- Heat about ½ inch (1 cm) of oil in a large skillet over medium-high heat.
- Fry chicken breasts one or two at a time, about 3–4 minutes per side, until golden brown and cooked through (internal temp: 165°F / 74°C).
- Transfer to a paper towel–lined plate to drain.
- Serve hot with lemon wedges and a fresh side salad or arugula.
