1 can (15 oz) chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, finely chopped
1/4 cup Kalamata olives, pitted and sliced
1/4 cup feta cheese, crumbled
2 tbsp fresh parsley, chopped
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
1 tsp red wine vinegar
Salt and pepper, to taste
Directions
- In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently until everything is well coated.
- Chill for 10–15 minutes before serving to let flavors meld.
- Serve cold or at room temperature.
