Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/4 red onion, finely chopped

  • 1/4 cup Kalamata olives, pitted and sliced

  • 1/4 cup feta cheese, crumbled

  • 2 tbsp fresh parsley, chopped

  • 2 tbsp extra virgin olive oil

  • 1 tbsp fresh lemon juice

  • 1 tsp red wine vinegar

  • Salt and pepper, to taste

Directions

  • In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
  • In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, salt, and pepper.
  • Pour the dressing over the salad and toss gently until everything is well coated.
  • Chill for 10–15 minutes before serving to let flavors meld.
  • Serve cold or at room temperature.
